Olive Oil, Salt & Pantry Guide
A Mediterranean pantry starts with good oil, good salt and a few staples that turn simple ingredients into dinner.
Which oil for which job?
Extra virgin olive oil
Néssi Organic Extra Virgin Olive Oil is made in Spain. Use it for dressings, drizzling over finished dishes, dipping bread and everyday cooking.
High oleic sunflower oil
Neutral in flavor, organic high oleic sunflower oil is a good choice for roasting and pan-frying when you do not want an olive oil flavor.
Coconut oil and toasted sesame oil
Organic unrefined coconut oil works in baking and stir-fries. Organic toasted sesame oil is a finishing oil: a few drops add a big nutty flavor to noodles and dressings.
Sea salt
Néssi sea salt comes from Sicily. Use coarse Sicilian sea salt for pasta water and grinders, and fine Sicilian sea salt for baking and seasoning at the table. Or keep a Mediterranean sea salt grinder by the stove.
Pantry staples worth keeping
- Bread crumbs: Italian-style for meatballs and cutlets, plain for everything else, or organic.
- Capers: capers for piccata and puttanesca
- Pasta sauces: traditional, marinara and arrabbiata
- Pickled peppers: sliced jalapeños and pepperoncini for sandwiches and pizza
