Muffuletta Sandwich with Giardiniera (Italian Pickled Vegetables)
Giardiniera is a mix of Italian pickled vegetables (such as carrots, cauliflower, celery and peppers) in a tangy brine. Chopped with olives, it becomes the classic “olive salad” of the New Orleans muffuletta, a big Italian-American sandwich that is perfect for game day and parties.
Ingredients (serves 6)
- 1 round sesame loaf (about 9 inches)
- 1 cup Néssi giardiniera, drained
- 1/2 cup pitted Mediterranean olive mix
- 2 tbsp capers
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar, 1 tsp dried oregano
- 4 oz each: salami, mortadella, ham, provolone, mozzarella (sliced)
Instructions
- Finely chop the giardiniera, olives and capers. Mix with olive oil, vinegar and oregano. Rest 30 minutes (or overnight).
- Slice the loaf horizontally and scoop out a little bread from each half.
- Spread half of the olive salad on the bottom, layer the meats and cheeses, then the rest of the salad.
- Close, wrap tightly and press under a heavy pan for at least 1 hour in the fridge.
- Cut into wedges and serve.
Other ways to use giardiniera
- On Italian beef sandwiches and hot dogs
- On pizza and in pasta salads
- On an antipasto board
